Paella

1 cup extra-virgin olive oil
1 rock hen, cut in 6 pieces
2 fresh chorizo links, sliced thickly
1/2 medium Spanish onion, minced
3 plum tomatoes, blanched, skinned, seeded and chopped green chili, diced small red bell pepper, diced small
2 cups medium-grain white rice
4 cups shellfish stock (see recipe below)
1 teaspoon saffron threads
2 bay leaves
1/2 teaspoon Spanish paprika
3 lobster tails, split
8 shrimp, heads on
24 clams, reserved from shellfish stock recipe
24 mussels, reserved from shellfish stock recipe
1/2 cup peas
Garnish: olive oil, chopped parsley, chives, micro greens
